Pecan Rocky Road Chocolate Chip Skillet Cookie


¾ c coconut oil, solid
1 ½ c packed brown sugar
2 tsp baking powder
½ tsp baking soda
1 tsp kosher salt
1 ½ Tbsp pure vanilla extract
2 flax eggs (1/3 cup water blended with 2 Tbsp ground flax-seed)
2 ¼ cups all-purpose flour
2 cups vegan chocolate chips
1 c toasted pecans
1 c vegan marshmallows


1.  Preheat your oven to 350n degrees
2.  In the bowl of a stand mixer cream together Coconut oil, sugar, baking powder, baking soda, vanilla, and flax eggs
3.  Add flour until well combined
4.  Fold in chocolate chips, pecans, and marshmallows until fully incorporated
5.  Transfer the dough to a medium skillet and bake until golden
6.  Serve with a scoop of vegan ice cream
