Ingredients for cake

3 cups all purpose flour
1 ¼ cup sugar
¼ cup brown sugar
1 tsp baking soda
1 ½ tsp cinnamon
½ tsp ground ginger
1 tsp salt
1 ½ cups vegetable oil
1 cup unsweetened apple sauce
4 large bananas, mashed
1 cup crushed pineapple
3 tsp vanilla extract
1 cup chopped pecans, toasted
Ingredients for frosting
4 ounces vegan cream cheese
1 Tbsp fresh pineapple juice
1 Tbsp spiced rum
2 ½ cups powdered sugar, sifted

Method for cake

  1. Preheat your oven to 350 degrees
  2. Grease and flour 2 9in loaf pans
  3. Sift together flour, sugars, baking soda, cinnamon, ginger, and salt in a large bowl and sit to the side. (when sifting you may notice small lumps of brown sugar left over. Simply take your fingers and run them over the lumps to push them through the sieve)
  4. Combine vegetable oil, applesauce, bananas, pineapples, and vanilla in a separate bowl
  5. Fold in the wet ingredients into the bowl of dry ingredients until well incorporated (don’t over mix)
  6. Fold in toasted pecans and divide batter between loaf pans
  7. Bake cakes for 45 min or until an inserted toothpick comes out clean
  8. Cool cakes in the pan fore 15 min before removing
  9. Make sure cakes are completely cooled before adding glaze and garnishes

Method for the glaze

  1. Mix the cream cheese, pineapple juice, and rum together in the bowl of a stand mixer fitted with the paddle attachment
  2. With the mixer at its lowest setting add in sifted powdered sugar
  3. If the glaze is too thick add in more pineapple juice. If its too thin add in more sifted powdered sugar.
  4. Drizzle over cakes and enjoy
